Introduction: A Culinary Cultural Treasure

The Poznań Croissant, known locally as the St. Martin Croissant, is more than just a pastry; it has become a beloved confection and a symbol of generosity and community spirit in Poland’s vibrant city of Poznań. Each year, as the city celebrates the traditional St. Martin’s Day, locals indulge in these delightful treats, consuming over a million of them in just one day during the festivities.


Rich History and Tradition

The origins of the St. Martin Croissant trace back to a legendary baker who wished to honor St. Martin’s spirit of charity. According to the tale, this baker crafted a pastry filled with rich ingredients to distribute to the needy. Over time, this creation evolved into the cherished St. Martin Croissant, which is now a distinct specialty of Poznań.

The production of these croissants is strictly regulated. In 2008, they received recognition as a geographical indication product under EU law, meaning that only bakeries certified by the Poznań authorities can produce and sell them under this official name. This assures that each croissant adheres to rigorous standards of quality. As of this year, only about 80 bakeries in Poznań have received this esteemed certification.


An Intricate Craftsmanship

The Art of Creation

Crafting a St. Martin Croissant is a meticulous process, often taking six hours or more. The most time-consuming part involves kneading the dough, which must undergo multiple cycles of mixing and resting. Each round of kneading incorporates butter, requiring the dough to be folded carefully, ensuring a rich and flaky texture. During the resting phase, the dough is wrapped in cling film and left to chill in the refrigerator for approximately half an hour, allowing for a perfect rise.

While waiting, bakers prepare the filling, grinding ingredients like lemon and orange zest, and gently sautéing them in butter. Once ready, the rested dough is rolled out into thin sheets, cut into triangles, and the filling spread generously before being rolled into the signature croissant shape.

The Baker’s Touch

As the bakers work, they embody artistry in their craft. The rolling of the dough requires patience and precision, as they deftly control the rolling pin with an attentive touch. During the rolling process, bakers skillfully encase the hearty filling within the dough, ensuring that the final product not only looks appealing but is also bursting with flavor.

After shaping, a glaze of sugar is brushed over the surface before a sprinkle of crushed almonds is added, preparing the croissants for baking. The oven temperature and timing are critical—only through exacting control can these pastries emerge golden and flaky on the outside, yet tender and moist on the inside.

The St. Martin’s Festival

When the freshly baked St. Martin Croissants are held aloft, their weightiness resonates with a sense of quality. The crust, kissed by the sun, glistens invitingly. A single bite reveals a crisp outer layer, followed by a tender interior filled with sweet, aromatic goodness that delights the palate and lingers in memory.

Every year during the St. Martin’s Festival, Poznań comes alive with a grand parade honoring St. Martin. Crowds gather in joyous anticipation, following the actor on a white horse who plays St. Martin. As onlookers walk beside him, they revel in the spirit of the celebration, eventually converging in a square where the air is filled with laughter and shared joys.

Throughout the parade, the St. Martin Croissant takes center stage. Locals proudly carry these freshly baked pastries, their faces glowing with happiness. Following the procession, festival-goers converge in the square and its surroundings, together savoring the taste of the St. Martin Croissants, sharing in the festive spirit.


The Croissant Today

Historically, Poznań residents enjoyed St. Martin Croissants only during the festival, but today these pastries have become an emblem of the city, eagerly sought after by visitors as a delightful souvenir. The city has even established a dedicated museum celebrating the St. Martin Croissant, offering tourists a chance to engage in the unique experience of making these treats themselves.
